Garry Roark

Garry Roark: Pitmaster Garry Roark offers the comprehensive barbeque experience: Ubon’s Barbeque Products, Ubon’s Restaurant and Catering and Ubon’s Championship Cooking Team. For more than twenty years Garry has been a strong presence in the barbeque world. Garry has taught many amateur grillers the fine art of cooking perfect Memphis style, competition quality barbeque. Garry is a nationally recognized pitmaster and represents Memphis style pork for the Big Apple Barbecue Block Party. He has appeared on Fox and Friends and in numerous cookbooks including “Peace, Love and Barbecue.”



Leslie Roark Scott

Leslie Roark Scott: Leslie is the self-appointed “Barbeque Princess.” She learned from the man she considers “The King of Q,” her dad, Garry Roark. At age eighteen Leslie was the first woman on the Memphis in May competition circuit to win a Grand Champion title. Leslie has become one of the few ladies of barbeque. Leslie is a partner in the Ubon’s Restaurant, Catering and Product line. Leslie is the chief rib and chicken cook for Ubon’s, Barbeque of Yazoo Championship Cooking Team. Brian Campbell

Brian Campbell: Brian, also known as “Beeve,” has been cooking on the professional barbeque circuit for almost twenty years. Brian specializes in cooking whole hog. His winning record stretches back into his days with his original team, The Sultans of Swine. Fifteen years ago Leslie convinced Brian to join forces with Ubon’s Barbeque of Yazoo. Brian’s methods for cooking a whole hog have been unchanged for a number of years and he holds the title of “Best of the Best Hog.” Brian is one of the few “stick burners” left in whole hog competition, and continues to find success with this method.
